Chocolate Chunk Cookies
Our recipe to make tasty, crunchy, Chocolate Chunk Cookies.
Ingredients
- Brown rice flour- 1/2 Cup
- Buckwheat flour- 3/4 Cup
- Baking Powder- 2 tsp
- Salt- 1 tsp
- Organic ghee (Clarified butter) or Coconut oil (unrefined or cold-pressed)- 1 Cup
- Brown Sugar- 1 1/2 Cup
- Vanilla- 1 tsp
- 2 Eggs
- 1 100 gram (3.5 ounces) bar of dark chocolate (at least 70%, 85% is preferable)
Method to Prepare
Preheat the oven to 375 degrees. Break the chocolate bar into chunks and keep aside. Combine the flours, baking soda and salt, set aside. In a larger bowl, cream the ghee and brown sugar. Add the eggs, oil and vanilla and blend until well-mixed. Stir in the flour mixture and the chocolate chunks.Use a teaspoon to scoop little balls of dough onto ungreased cookie sheets. Spread far apart, the gluten-free dough will will spread quite a bit which will result in flatter, curnchier cookies than the traditional recipe. Bake for 9 minutes. Enjoy the freshly baked chocolate chunk cookies.
