Paneer ki Kachori
Preparation Time- 10 minutes

Serves- 4
Ingredients
- Paneer (cottage cheese), grated- 200 grams
- Refined flour (maida)- 1 Cup
- Melted ghee- 6 tbsp
- Salt to taste
- Cumin seeds- 1 tsp
- A pinch of asafoetida
- Coriander powder- 2 tsp
- Garam masala powder- 1 tsp
- Red chilli powder- 1/2 tsp
- Chaat masala- 1/2 tsp
- Chopped, fresh coriander- 2 to 3 tbsp
- Oil to deep fry
Method to Prepare
Pour the refined flour in a bowl. Make a well in the center and add 4 tbsp of ghee and salt. Mix well. Add a suffecient amount of water and knead the mixture to a stiff dough. Cover with a damp cloth and set aside. Put the grated paneer in a bowl. Heat the remaining ghee in a non-stick pan. Add cumin seeds. Once they begin to change colour, add asafoetida and then mix. Add coriander powder, garam masala powder, red chilli powder, chaat masala, coriander leaves and salt and then saute for 30 seconds. Add the paneer and mix well. Put this mixture in a bowl and let it cool. eat a suffecient amount of oil in a kadai. Divide the dough and stuffing into 8 equal portions. Roll out the portions of dough into a thick disk shape and stuff it with the paneer filling. Roll into a ball and flatten it slightly. Deep fry the kachoris on a low heat till they are done. Drain onto an absotbent paper. Serve hot.
